Fiesta Beans and Rice Recipe

Rice and beans will always be a $5 Dinner. Unless, of course, you go all sorts of crazy and add in expensive spices like saffron or cardamom (2 of the more expensive spices).

Rice is crazy cheap…especially if you buy in bulk. And beans might be even cheaper when you buy dried beans and cook them yourself. (They are really easy to cook…if you haven’t tried it, you should. Instructions for cooking dried beans.)

If you really need to make drastic cuts to your grocery budget, then I suggest having at least 2 rice and bean style meals per week. They can cost as little as $2 for a meal for 4 people. So you can see what an impact these kinds of meals can have in reducing your grocery spending.

And rice and beans meals don’t have to be boring and bland! You can jazz them up with all sorts of fun flavors…

Fiesta Beans and Rice

Yield – 4 servings
Prep Time – 10 minutes
Cook Time – 50 minutes for brown rice, 20 minutes for white rice

Ingredients

1 ½ cup brown rice
2 cups cooked red beans
1 red pepper, seeded and chopped
1 green pepper, seeded and chopped
1 can (8 ounces) tomato sauce
1/4 cup lime juice
1 teaspoon ground cumin
Salt and pepper to taste

Directions

  • In a large saucepan or Dutch oven, bring 3 ½ cups of water to boil. Add the brown rice and return to boil.  Cover, reduce heat to medium and cook the brown rice for 45 to 50 minutes, or until tender.
  • Once the brown rice is cooked, stir in the cooked red beans, chopped red pepper, chopped green pepper, tomato sauce, lime juice and ground cumin. Season with salt and pepper to taste.
  • If necessary, turn heat to low, cover and keep warm until serving time.
  • Serve Fiesta Beans and Rice.
  • Optional: Garnish with fresh cilantro if you have some in your garden or on hand.

Quinoa Primavera Recipe

I love quinoa.

I love how it’s so filling. I love that my kids lick their bowls when I make it for them. I love that it’s packed with protein. I love that it’s an inexpensive way to make a gluten free meal. And I love that you can mix just about anything with it for a delightful one dish dinner.

Tonight we have on the table a Quinoa Primavera with diced grilled chicken, peas and tomatoes from the garden. Tossed with a creamy herb sauce and topped with Parmesan cheese.

It’s the perfect combination of bold flavors…from the burst of the sweet tomatoes, to the fragrance that comes from the fresh herbs, to the little bite from the fresh garlic.

Tasteful and healthful dinner on the table in 20 minutes or less with this Quinoa Primavera.

Quinoa Primavera

Yield – 4 servings
Prep Time – 10 minutes
Cook Time – 15 minutes

Ingredients

1 3/4 cup quinoa
2 cups diced grilled chicken
12 oz. bag frozen peas, cooked
1 pint cherry or grape tomatoes, halved
2 oz. cream cheese, softened
1/4 cup milk
2 Tbsp chopped fresh herbs, basil, oregano, parsley
2 garlic cloves, crushed
Salt and pepper
Parmesan cheese, for each serving bowl

 

Directions

  • Boil 4 cups of water, then add the quinoa and return to a boil. Cover, reduce heat to medium and cook for 15 minutes.
  • In a small mixing bowl, whisk together the cream cheese, milk, herbs, garlic, salt and pepper.
  • Once cooked, toss the quinoa with the grilled chicken, peas, tomatoes and cream sauce. Add to serving bowls.
  • Sprinkle pinchful of Parmesan cheese into each serving bowl.
  • Serve Quinoa Primavera warm or chilled.

What Freezes Well and What Doesn’t – One Dish Dinners Tips and Tricks

When making recipe after recipe for the One Dish Dinners cookbook, I found myself with lots of extra food on hand. I gave away about 90% to friends and family members. And either ate or froze the other 10%.

For the most part, one dish dinners freeze well…with the exception of a few things!

What Freezes Well

  • Cooked pasta/casseroles
  • Enchilada casseroles made with tortillas
  • Brown rice dishes
  • Shredded chicken, beef or pork
  • Grilled chicken, sliced or diced
  • Sauces – spaghetti, enchilada sauce, etc
  • Browned ground beef
  • Cooked beans
  • Meatloaves, meatballs
  • Soups, stews, chili

What Doesn’t Freeze Well

  • Cooked Potatoes, they get mealy (although mashed potatoes freeze well)
  • Soups or stews made with cornstarch
  • Quick cooking rice
  • Mayonnaise based meals, as the mayo will separate as it freezes and thaws
  • Fresh vegetables, that you want to use later as “fresh.” (You can blanche and freeze many vegetables, or even freeze fresh vegetables as they are if you plan to use them cooked into a soup or stew. They will not hold their crunchiness after they thaw.)

Also, remember…it’s best for foods to be at room temperature before you freeze them, to reduce freezer burn.

Sausage Pizza Kebabs Recipe

Alright friends. I’ll never look at kebabs the same again.

And I’ll never make them again without a side of grilled garlic bread.  When you do the garlic bread on the grill, you don’t dirty another dish. You don’t have to turn on the oven. And you can butter it as you slap it on the grill.

Little fuss. Little mess.

Big. Big flavor.

Full. Full tummies!

Sausage Pizza Kebabs

Yield – 4 servings
Prep Time – 15 minutes
Cook Time – 15 minutes

Ingredients

3 Sweet Italian sausage links, cut into 3/4″ slices
1 red onion, diced into 1″ pieces
1 each – red bell pepper, green bell pepper, yellow bell pepper, cut into 1″ pieces
Shredded mozzarella or cheddar cheese
1 cup pizza sauce, for dipping
Grilled garlic bread

 

Directions

  • Skewer the sausage slices, red onion pieces and bell pepper pieces.
  • Grill for 10 to 15 minutes over low heat, or until sausage has cooked through.
  • Sprinkle the cheese over the kebabs soon after you take them off the grill so the cheese will melt over top from the heat.
  • To serve, dip the Sausage Pizza Kebabs in pizza sauce. And dip the grilled garlic bread in there too.
  • Serve Sausage Pizza Kebabs with dipping sauce and Grilled Garlic Bread.
